Our 35-year-old chef describes his cuisine as gourmet as he likes to mix ingredients from land and sea, such as calf’s head with craw fish, or with his buchelle tourangelle, a traditional Touraine stew made with calf’s sweetbreads to which Yoann adds scallops.
